‘Spinage’ with Cream and Eggs
This being a pretty genteel dish, it is a pity to leave it out. Scald it in a morsel of butter and water and salt, press the juice from it very dry, chop it small, and put it into a stewpan with about half a pint of cream, a morsel of butter and flour, a whole old onion, pepper and salt, a little nutmeg; stew all together a few minutes, take out your onion, squeeze in lemon or orange, and dish it up. Garnish with either hard eggs cut in two, or bits of bread nicely fry’d. William Verral
